Homemade Bread Recipe

My mom has been baking bread as long as I can remember. When I was little I longed for white wonder bread like everyone else. Now that I have real taste buds and the good sense of an adult I want to say, "THANK YOU mom, for baking whole wheat, warm deliciousness." There is NOTHING like warm bread straight from the oven and hopefully my kids will look back on the bread of their youth with gratitude. ;)

There are three parts to this bread recipe...

Yeast:

Boil a potato in 2 cups of water. When the potato is fully cooked blend the water with 1/2 of the potato. Mix the potato water with 1 1/2 cups of cold water. Let it sit until it's the same temp as baby bath water.

Mix in 2 TBSP of yeast and a dash of honey.

Let it sit until it doubles in size.

Dough:

Mix in 4 TBSP of vegan butter, a dash of salt and 2 to 4 cups of whole wheat flour. Once it builds up a good consistency switch the kitchen aid attachment to the dough hook. Keep adding flour until you have 6 to 8 cups of flour in your dough. You'll know it's perfect when the dough is sticky, but not stringy. Let it knead for 15 minutes.

Rise:

Fill a glass bowl with hot water then dump it out. Grease the inside of the bowl with butter and then place the dough in the bowl. Fill your sink with hot water and place an oven rack over the sink. Place the bowl on the rack and cover with wax paper. Leave the dough to rise.

Once it's doubled in size cut the dough in half. Flatten each piece on a floured surface to pop any air bubbles and then tightly roll the dough into a loaf. Fold the ends underneath the loaf and then place them in buttered bread pans.

Set the loaves back on the rack over the sink, cover with wax paper and leave them to rise.

Once the loaves are risen halfway place the rack back in the cold oven. Place the loaves in the oven and cover them with wax paper. Turn the oven onto 350 degrees. The bread will fully rise as the oven warms up.

Take the wax paper off the loaves after about 10 minutes. Let the bread bake for about 30 to 40 minutes. You'll know the bread is done when you can flip it over, knock on the bottom of the loaf and it sounds hollow.
