I initially chose a plant based diet for a very simple reason: eating meat has always, always grossed me out. My reasons for living sustainably and consciously have evolved since then and once I finally cut out animal products I experienced something I didn't know was missing ... I woke up. I have had more energy, more clarity, and no longer feel weighed down by the food I eat. 

It would be really easy to become a "pasta vegan" and live off of pastas, breads, and vegan junk food. Those things are accessible and sometimes are the easiest solution to creating a vegan option for a meal, but they are going to leave you feeling like a vegan diet isn't working. Hear me, I eat pasta AND bread. I eat vegan junk food. After spending years in a cycle of body dysmorphia, self hatred, and withholding nourishment from myself I give myself the room to eat WHATEVER I want to eat. I don't live a life of restriction or a life filled with rules. Living off of plant based foods is an act of freedom and self love for me. For that reason I give myself an entire rainbow of foods on a daily basis. 

In an average week you'll find these foods in my kitchen: fresh juices, smoothies, colorful salads, quinoa, rice, tofu, beyond meat burgers, red curry, homemade pinto beans, vegan cookie dough, cookies, pasta dishes, avocado toast, vegan sausage patties, potatoes, berries, watermelon, apples, bananas, hummus, lacroix mixed with Ningxia Red, red wine, vegan "bacon", buddha bowls, cauliflower, cabbage, broccoli, beets, carrots, corn, cilantro, avos, oranges, limes, lemons, ginger, turmeric, and SO MUCH MORE. I shop for plants of every color and live an abundant, full lifestyle. This is freedom for me.
